Interview: Gill Carroll Owner 37 west
Just over one year after opening, 37 west in Newcastle in Galway has quickly established itself as the place to eat for breakfast, brunch, lunch or just to grab a coffee and a tasty healthy treat. The brainchild of business woman Gill Carroll, 37 west was born out a vision and dream of a woman who had worked in hospitability and retail for over 10 years but wanted to forge her own path and express her personality through healthy food.
Beginning her career in retail and then branching into hospitality it was in Edinburgh where Gill first took her entrepreneurial leap- taking over a brewery run pub- transforming it into an up market bar serving high quality food, beers & wines. “I loved this, putting my own stamp on the business and making changes and implementing ideas that turned this business into a profitable one. I knew I wanted to be in Galway and knew what I wanted to achieve with food, so after I made the decision to leave Edinburgh, I began to search for a location, look at exactly what food I wanted to serve and what the overall feel and vibe I wanted for this business. And so after much planning, testing and support, 37 west was born,” Gill explained.
Sitting on the board of the Galway City Business Association as well as the Galway Chamber of Commerce and supporting local charity initiatives, Gill is vested in the local economy and its growth. “Business for me is about support and connecting with like minded people who can work together to grow individual businesses in their respective fields. I think setting goals and moving forward is key to maintaining your business and allowing for growth to continue. I am constantly up skilling myself, attending creative collectives, being part of a weekly mastermind and reading and teaching myself how I can make my business better for both my staff and my customers,” tells Gill.
Gill has recently given talks to the Chamber of Commerce on Branding, the NUI Entrepreneur Society, The Galway Pecha Kucha Night and to over 300 delegates at the Women’s Business Enterprise event.
Since opening 37 west, Gill has embodied her own tag line- ‘Healthy is the new sexy’ by adopting a complete lifestyle overhaul. Gill began to attend Boot camp, became a 2 time Tough Mudder hero and ran her first half marathon- all fuelled by the energising Paleo diet. “It all came together for me once I knew what I wanted to do with my career. I knew I needed to be the healthiest version of myself and wanted to enjoy, eat, taste real foods that were filling and good for me. The healthy lifestyle has helped me to bring the best side of me to the table at 37 west and in business.
To get further insight into what foods she can use in her cafe to get maximum nutrients and flavour for her 37 west customers Gill went back to college and has recently completed her Diploma in Nutrition and Health Coaching with the Irish Institute of Nutrition and Health.
